What kind of soup you making that it takes 4-5 hours bruh. I always make fresh soups and it never takes me over 1 hour. Those instant powder soups are so bad in comparison.

Made a Basque "burnt" cheesecake this week, turned out okay but i'm going to have to tweak the proportions on it all, the recipe i was following called for a 9" spring form pan, but when you click the link it takes you to the 10", and comparing the batter to pan height between the video and my experience, he definitely used the 10. on mine, the center never really set well and the top go over browned into the actual burnt flavoring, not just caramelized. I think dropping the batter by about 1/4, and cooking it about 10 minutes less should do the trick

I was told the only proper way to make french toast was to toast the bread first. I gotta try this hack.

I've been playing around with smoking a whole chicken. Think I finally got the technique down

Spatchcock a chicken. Rinse and pat dry. Season. Then throw on the grill ~350 deg F for ~1 hour

Comes out juicy, flavorful, cooked.. and with CRISPY skin

Playing with the smoker/pellet grill some more today

Did another whole chicken for the week

I think I finally figured out how to use it... Made some perfect streaks tonight

Gonna try again to make sure it wasn't a fluke.. I should have taken a picture really

And next will be cuts of salmon... I prefer baked salmon.. But my wife loves it pan fried/pan seared

I finally got to use my portable grill. Drove to the park a couple weeks ago and grilled some hot dogs. The only problem is, I haven't cleaned it yet 🤦🏾‍♂️

Made some crock pot/slow cooker pulled pork with homemade corn tortillas and cilantro/lime cabbage

I got a vitamix last year when they were having a sale, been making hot sauces with it. Been an exploration into flavors

.. I used it for everything for a while

Most surprising thing was making hot soups from scratch. I made baby food purees as well.

...now I mostly use it for guacamole, smoothies, sauces, and a banging pina colada (that was Puerto Rican approved - Ms Thickums and her mom)

I actually got one for my parents, my brother, my best friend, and Ms Thickums for her birthday

...I told you all before - it was around the time I got caught being inappropriate around her. The purpose of the text was the put up clear boundaries between us because we were about to start working together again.

We haven't had any issues. Things have been great between us (until just recently...we're kinda on the mend from fighting right now over something dumb. She messed up something...then lied about it...but dragged me into it. I told her she should have at least given me a heads up...I could have made it disappear before anyone noticed...or just been truthful because it was so minor that it didn't matter. She's like "I didn't lie...I just kept it secret". It really pisses me off because it's like lie to anyone else, lie to yourself...but don't lie to me)

...but anyway, our families have become friendly in the past 2 years or so...hence her mom coming to our house on a visit one weekend.

I'm not sure I'd describe our families as "close"

We've gone to a restaurant maybe 3x. They've come to our house 3x. When my son was born, we dropped my daughter off with her at midnight (we live 8 minutes apart) so the SIL could pick her up the next day. Our daughters trick or treated together last year in Ms Thickums' neighborhood. And our daughters have played together at the community park a few times.

Ms Thickums and I are close. I think our spouses just accept that the other exists... But would probably object to anything that was weird... Even if it was entirely innocent

Nothing has happened between us... And our feelings have cooled significantly in the past 2 years... But I still wouldn't travel alone with her... Or drink heavily around her

Banging Pina Coladas

2.5 fl oz Coconut cream
2.0 fl oz heavy whipping cream
2.5 fl oz white Rum
6 fl oz pineapple juice
250g of ice

Add all ingredients...Blend on high until completely combined (I have a vitamix so use the smoothie/frozen drink setting)... Garnish with a pineapple slice and maraschino cherry. Serve immediately. Let the compliments roll in

Oh geezus I have been cooking this weekend and eating some F-ing good food!! Thursday I went to the "pricier" grocery store in the area [Harris Teeter]. Bought a salmon filet, asparagus, and potatoes. Had lemon/pepper/butter salmon (I broiled it and OMG) with asparagus and garlic butter potato mash. Friday I went to the "fancier" grocery store [Wegmans]. I bought grassfed steaks, scallops, and potatoes. I made grilled steak, pan seared scallops, white truffle french fries, and a wedge salad. Gootgawd it was just all so good!!

My wife was like - "You went to the "fancy" store without me? 1I wanted to check it out". So we went again [Wegmans]. Bought more scallops, swordfish steaks, salmon, crab cakes, brussell sprouts and asparagus. We had the swordfish, rice, brussell sprouts. Today we will do salmon, crab cakes, scallops, rice, and a salad.

2 things really stick out to me. 1 - my daughter has fancy tastes. She has been digging into this food with 0 complaints. 2 - those grocery stores made me realize we are riffraff. We couldn't afford to buy our day to day stuff there....which is wild to me. We have no debt except a mortgage. We drive older cars that we bought for cash. We make GREAT money between both being engineers and owning rental properties. The person in front of me got a cart of groceries and spent $400+. It was a small cart and wasn't close to full. We got 2 paper bags and spent like $125. We kinda had a nervous chuckle as we left just from the shellshock. We won't be back for a while.

I didn't know that Wegmans was fancy, never been even though there is one not that far from my parents' house. They will typically go to Whole Foods which is closer and I'm guessing more of a competitor to Wegmans.

I've also come to the realization that in today's world when people say, "I can't cook." and make no effort to learn something basic, OR when they say "I don't like cooking" they're just lazy. They'd rather eat trash and have other people do it for them than learn how to make something simple.

Before the internet and specifically YouTube, yeah it was relatively difficult to learn how to cook. You either had to go to a class or had to have someone you know teach you assuming your mom (or dad) didn't teach you while growing up and that wasn't the easiest thing to set up.

My mom didn't really teach my brothers and me anything. She'd have us take out meat when we got home from school to defrost so she could cook it when she got home or she'd ask us to put something in the oven or start boiling water and stuff like that but she never officially taught us a damn thing. I basically learned by somewhat observing her, trial and error, and then YouTube which leveled my game up significantly.

I tell people, you don't need to be Gordon Ramsay, just learn something basic and simple, it's really not that hard, stop being lazy.

This isn't to say that there aren't days that you absolutely don't feel like cooking but once you learn something basic you find yourself wanting to try a few more things.

I think I'm frustrated because due to work I talk to a lot of young people in their 20s and my god, so many don't know how to do anything.

Cooking is mostly imitation...then trial and error. You see something that looks good. You find the ingredients. You start to combine them. Over time, you learn which combinations work and which give you explosive diarrhea. I don't think they are lazy per se....I think they have no "staying power".

Why try to do this - incorrectly - for 3 months....when this person does it perfectly every time? Plus nothing to clean or equipment to buy? Besides, society has very much shifted (in our lifetime no less) to one that promotes convenience, speed, and taste. I mentioned before that it blows my mind to see my neighbors order Doordash 3-4x a week. We have 4 grocery stores within 10 minutes of us. That jumps to 7 if you add in the Hispanic grocery stores (15 minutes). Actually, just found out my neighbor is a manager at a grocery store - so that confuses me even more. Then again, he probably couldn't afford the groceries at the store he works at.

Also...nigga?! Whole Foods is another high end grocery store. We never did question why you were in Japan allll those years ago. Is your dad like a retired Military General and your mom a former Supreme Court Justice? :shock:
